One year on from the Mitchell flood: Mitchell Bakery - ABC Online

A year ago, they feared their bakery in the south west Queensland town of Mitchell might never open its doors again.

Their small business had been inundated with floodwaters, destroying more than $400,000 worth of equipment.

Mrs Mansfield said at the time that she and her husband were at their wits end.

"Yesterday we were completely deflated, yesterday we couldn't sleep, we were tossing and turning," Mrs Mansfield told ABC reporter Bruce Atkinson.

ABC reporter Blythe Seinor recently ventured back to the town of Mitchell to see how the Mansfields were faring one year on.

She found a bakery with gleaming countertops, the fresh smell of bread, and not a spot of mud.

To top it off, Mr Mansfield recently won an award for his lamingtons at a bread show in Toowoomba.

But Mrs Mansfield said it's been difficult for her to watch news about the floods in Bundaberg and Gympie.

"Your heart just really goes out to them," she says.

"Those people that have done it two and three times and are not insured... it's bad enough when you are insured to have to go through that process, but when you're not insured and you have to go through that and there's nothing left... it's heart wrenching for them."
